Course Requirements

Undergraduate Major in Nutritional Science (B.S.)

As shown in the accompanying Major Academic Plan (MAP), courses required for the undergraduate major in Nutritional Science are divided into three groups. One group consists of supporting courses in biology, physiology, chemistry, physics, and statistics. The second group is the Nutritional Science core, required of all majors. The third group of classes are electives, from which students choose 8 credits to meet graduation requirements. Students choose electives consistent with their interests and emphasis in Nutritional Science (see Program Emphases).

Undergraduate Minor in Nutritional Science

A minor in Nutritional Science consists of completion of two core courses plus an additional 10 credits from a list of elective Nutritional Science courses, for a total of 16 credit hours (see Undergraduate Catalog) Nutritional Science is an excellent minor to complement an undergraduate major in many disciplines, including:

  • Biochemistry
  • Molecular biology
  • Health Science
  • Nursing

Graduate Program in Nutritional Science (M.S.)

The M.S. Program in Nutritional Science emphasizes Applied Nutrition (International Nutrition, Public Health Nutrition, Community Nutrition, Nutrition Education, Dietetics Administration) and Experimental Nutrition (Nutrient Metabolism, Nutritional Biochemistry, Nutritional Molecular Biology). Students are prepared for advanced training in graduate or health professional schools, and for employment in the biotechnology industry, biomedical research, the food industry, public health departments, the fitness industry, government feeding and assistance programs, and international relief agencies. Students are expected to conduct original research with a view to presenting their results at regional, national and international professional meetings, and publishing their findings in peer-reviewed professional journals.
